We started out with the idea when my brother made a sparkling wine to a traditional recipe using only elderflowers on the Isle of Skye. He had no interest of leaving the island to work on the business, as he is happy there building boats. That left me to go and experiment on the process and recipes, to see what else could be made without using grapes. To perfect the recipes I enlisted the help of Richard, who has had 30 years of experience in wine making. Between us we have made our first products, a sparkling elderflower and an elderflower blush (rhubarb, strawberries and blackberries added at the fermentation stage. We currently make them down in Hastings.
